Chewy Chocolate Chip Cookies

I think I have created my new favorite chocolate chip cookie. Crisp on the outside, chewy on the inside. A glass of milk is all you need. Dang.


Makes 21 3 1/2' cookies


1 3/4 cup Jovial Einkorn all-purpose flour

3/4 teaspoon baking soda

2 teaspoons kosher salt - such as Diamond Crystal

1 1/2 sticks unsalted butter, melted

1/2 cup white sugar

1/2 cup brown sugar

2 tablespoons Lyle's Golden Syrup

1 tablespoon vanilla extract

1 egg

6 ounces good quality dark chocolate chips such as Guittard extra dark

  • Mix the flour, baking soda and salt together in a bowl and set aside

  • In a stand mixer combine the melted butter, golden syrup, and the brown and white sugar

  • Beat for about 3 minutes

  • Add the egg and vanilla beat for about a minute

  • Add the dry ingredients and beat until just combined

  • Remove the bowl from the stand mixer and add the chocolate chips and stir them in

  • Refrigerate the dough for about an hour

  • Preheat the oven to 325 degrees

  • Line a cookie sheet with parchment and measure out the dough with a 1 1/2" cookie scoop and roll into a ball

  • Place the dough ball on the parchment - no more than 9 per cookie sheet as they spread

  • Bake for about 15 minutes or until they are lightly golden brown and flattened out

  • Let cool on the cookie sheet until they firm, then cool on a wire rack
