Tahini Pistachio Granola



I am a little obsessed with this granola. It is so easy to make and so delicious!


2 cups old fashioned rolled oats

1/2 cup well stirred tahini

1/3 cup maple syrup

1/2 cup shredded coconut (sweetened or unsweetened)

1 teaspoon kosher salt

1/2 cup chopped shelled pistachios

1 teaspoon vanilla


  • Preheat the oven to 350 degrees

  • Combine all of the ingredients in a large bowl and stir until the tahini is well incorporated

  • Line a baking sheet with parchment paper

  • Spread the granola in an even layer

  • Bake for 10 minutes

  • Remove from the oven and stir the granola

  • Return the pan to the oven for an additional 10 minutes or until the granola is lightly browned

  • Keep an eye on it, so it doesn't burn towards the end

  • The granola will crisp up as it cools

  • Store in an airtight container at room temperature



I love to add this granola to my bowl of steel cut oatmeal and berries

and a bit of maple syrup is alway nice
