As usual, I ignore the advice of the lettuce seed packages of spacing and thinning and I end up with a packed raised bed of mixed greens - When salad is on the menu for most days, I find it important to mix up the dressings and combination. Abundance is a good thing.
Honey Mustard Dressing
This classic all purpose dressing is great for spinach, arugula or field greens, especially nice with a buttermilk blue cheese or goat cheese. Add a handful of sliced strawberries and cherry tomatoes and basil.

2 tablespoons honey
1 tablespoons Dijon mustard
â…” cup olive oil
½ teaspoon salt and freshly ground pepper
Ginger Miso Dressing
This dressing will stand up nicely to any hardy green - toss shredded kale, sliced apples toasted cashews. Try drizzling some over grilled pineapple and pork chops.
¼ cup seasoned rice vinegar
2 tablespoons white miso
1 teaspoon finely grated fresh ginger
3 tablespoons toasted sesame oil
5 drops green tabasco sauce
