Almond Macaroons


These simple little cookies can be dressed up with a drizzle on melted chocolate or sandwich them with a touch of lemon curd or seedless raspberry jam.

Almond Macaroons

Makes 16 cookies

1 cup almond meal

2/3 cup granulated sugar

1 large egg white

pinch of salt

½ teaspoon almond extract

powdered sugar to roll the cookies in

  1. Preheat oven to 350 degrees

  2. Line a cookie sheet with parchment paper or a Silpat silicone sheet

  3. In a bowl combine the almond meal, granulated sugar, egg white salt and almond extract and mix well

  4. Put the powdered sugar in a shallow dish

  5. With your hands roll the dough into 1 inch balls, you should have 16

  6. Roll each ball in the powdered sugarA

  7. Place the cookies on the cookie sheet and with a glass press the cookies to about a 1 ½” diameter

  8. Bake the cookies for about 12 minutes until golden brown

  9. Cool on a wire rack
