Buffalo Chicken Legs



Just in time for football season - this small addition of baking powder gives the skin an extra crispy texture. So easy to throw a batch together and watch the game.


Serves 6


12 drumsticks, patted dry

2 teaspoons baking powder (not baking soda)

½ teaspoon salt

½ teaspoon black pepper


1 tablespoon melted butter

½ cup Texas Pete hot sauce



  • Preheat the oven to 300 degrees

  • Combine the baking powder salt and pepper in a small bowl, place the chicken legs in a large bowl and sprinkle the dry ingredients over and toss to coat

  • Spread the chicken out on a foil line baking sheet and bake for 30 minutes

  • Remove the chicken from the oven, combine the hot sauce and butter in a large bowl add chicken and toss to coat

  • Put the chicken back on the baking sheet and back in oven at 425 degrees for about 20-30 minutes or until nicely browned and bubbly, spoon the pan juices over the chicken


Serve with more hot sauce, blue cheese dressing and celery sticks


Blue Cheese Dressing

4 ounces blue cheese, crumbled

1 cup mayonnaise

2 tablespoons seasoned rice vinegar

½ teaspoon black pepper
