This is nothing but comfort food to me - my mother would make it often and if you were lucky, you would be in the kitchen in time to get a warm bowl of it. I love it with berries of any kind - these are Wineberries.
2 cups whole milk
3 tablespoons quick cook tapioca granules
1/2 cup sugar
2 eggs, well beaten
Pinch of salt
1 teaspoon vanilla extract
Combine all of the above ingredients except the vanilla in the top of a double boiler
Fill the bottom of the double boiler with water and bring to a low boil
Place the top on the bottom and stir for about 8-10 minutes or until the pudding starts to thicken - it should be about like thin pancake batter when it is done. It will thicken as it cools
Add the vanilla and stir
Allow the pudding to cool and thicken, serve warm or refrigerate and serve cold
