Classic Tapioca Pudding

This is nothing but comfort food to me - my mother would make it often and if you were lucky, you would be in the kitchen in time to get a warm bowl of it. I love it with berries of any kind - these are Wineberries.


Serves 4

2 cups whole milk

3 tablespoons quick cook tapioca granules

1/2 cup sugar

2 eggs, well beaten

Pinch of salt

1 teaspoon vanilla extract


  • Combine all of the above ingredients except the vanilla in the top of a double boiler

  • Fill the bottom of the double boiler with water and bring to a low boil

  • Place the top on the bottom and stir for about 8-10 minutes or until the pudding starts to thicken - it should be about like thin pancake batter when it is done. It will thicken as it cools

  • Add the vanilla and stir

  • Allow the pudding to cool and thicken, serve warm or refrigerate and serve cold



When a recipe has just a few ingredients they really stand out. Seek out small dairies and find your favorite - this is mine.
