Whipped Feta with Speck and Pears

This simple combination makes for a fabulous quick appetizer or a light lunch. To make a small batch of whipped feta combine 2 ounces of feta with 1 ounce of cream cheese in a bowl and stir vigorously until quite smooth. Cut a pear in thick rounds (removing the seeds) and rub the cut sides with lemon, top with piece of speck, then a dollop of whipped feta, minced fresh rosemary and a grind of black pepper.
