Slushy Peach Cups

These little drinks are just made for a steamy afternoon - either as a reward for a long day of yard work, or to top off a perfectly lazy day. They can be made with or without the rum, but if you do include the rum, make sure it is dark rum, and I find the crowd favorite is Mount Gay. The mint and lime balance out the peach and rum nicely.


Serves 2

8 ounces frozen peach slices

6 mint leaves

3 tablespoons frozen limeade concentrate (undiluted)

1/2 cup cold water

2 ounces of dark rum (optional)


  1. Combine all of the above ingredients in a blender until smooth, add a bit of water if needed to blend, the drink will become more liquid as it melts a bit.

  2. Divide between two glasses and serve with a sprig of mint
